This easy, fast crumble can be completed in the time it takes the kids to wash up and set the table and makes for a lovely spring desert!
INGREDIENTS
For Filling:
4 Cups Rhubarb (1 1/4 lbs - One Jay Hill Farm Bunch!)
1 Apple or 1 Cup dried apple
1/2 Cup sugar
1 egg
1/4 Cup Maple Syrup
1 tsp. Cinnamon
1 tsp. Nutmeg
1 tsp. Vanilla extract
For Crumble:
1 Stick cold butter
1/2 Cup flour
1/2 Cup Quaker old fashioned oats
Pinch of salt
1/2 Cup packed brown sugar
INSTRUCTIONS
Prep:
1. Preheat oven to 350
2. Chop apple and rhubarb into bite size pieces
For Filling:
1. Mix rhubarb, sugar, apple, egg, maple syrup, spices and vanilla in a 2 quart baking dish. (I suppose you could do this in a bowl and then pour it in, but I like to save myself the extra clean up. :-) )
For Crumble:
1. In a large bowl or kitchenaid mixer, mix together flour, oats, butter, brown sugar and salt until butter is crumbled, but still firm. (Pea sized bits work)
2. Pour crumble over filling.
3. Bake 45 minutes and serve warm with vanilla ice cream.
